One of the first absinthes made with grande wormwood to be legally imported into the USA in 2007 after a 95 year prohibition. Produced with traditional methods and ingredients by Combier Distillery in the Loire Valley in France. 62% abv, light green color, and medium body. Loaches beautifully with water or ice. This is a beautiful example of a classic absinthe, and works well in a Green Fairy with ice water, or in a classic cocktail. Anise and fennel, grassy, earthy, and sharply herbal. Alcohol blast followed by a long sweet minty finish. Not overpowering in a cocktail, but not shy in flavor. Perfect.

Reviewed February 21, 2020 (edited May 1, 2021)I love absinthe, but not this one. Tried straight and with water. Floral herbal nose. Anise, mint, dry herbal, then explodes with ethanol and a very very bitter herbal (wormwood?) finish that isnt pleasant. Dry and astringent, leaves mouth tingling and alkaline--bleh! Not sweet. Not so much green in color as light khaki green. Perhaps this would mix well (in small doses) in a classic cocktail, but it didnt improve much in a classic Green Fairy with ice water. For the premium price, you can find a lot better absinthes. -

Reviewed February 20, 2020 (edited March 26, 2020)One of those standards you drank in the 1970s, and can still safely order in any bar. Smooth and sweet corn, caramel, with oak vanilla and a bit of a spicy peppery rye bite. Quick ethanol flash and finish. -

Reviewed February 20, 2020 (edited July 5, 2022)Sweet grain on the nose. Sweet cereal, raisins, and vanilla, then wood comes on in the finish. Tannic aftertaste. Lighter body and color. Descent wheated whiskey, but average at the price.
