Sweet up front, mellow, there is a single malt that adds an undertone, but not over powering. Finish has a pepper, slight smoky profile.

Thick body, corn and oak nose Coats he mouth nicely, sweet caramel, fig, raisin, vanilla, slight spice, just an amazing sip. 15Mar24 revisit Nose: sweet corn, marshmellow, some vanilla. Palette: marshmallow up front, more malt character, some licorice candy on the back. Subtle oak in the finish.

Batch 3, bottle 188, 62.1%, Herbal nose Willett style backbone, honey, peppery, more herbs. Marzipan and dill. Spicy finish. Slightly sweet not dry

More cinnamon then caramel, slightly sweet. Some cedar, fades to dry sweet vanilla
