Balcones Texas Pot Still Bourbon

I tried it first neat, it was quite potent, the alcohol bite felt similar to a barrel strength and over powered the flavor for me. Once the bite died down the flavor was pleasant, somewhat sweet and dense. I added a single cube and let it sit until about half dissolved and was happy with the result, the bite was less impacting and the flavors came out. I feel it’s sweet and complex. I’m not great at picking flavors but the one cube left plenty of flavor to ponder as I sipped the last of the glass. I would buy a bottle of this.

I've had several glasses of this now, and won't alter anything in my full review. But I'm learning more about this whisky. I've detected brown sugar in the nose, and a hint of chocolate cake. Drinking this bourbon is like sitting on a log with a mesquite barbecue on one side, and roasting chile on the other. It may be that there are more complex whiskies out there, and tastier ones, but this is absolutely the best I've ever had.

Nose: honey, vanilla, cherry and wood. Very classic. Taste: very strong wood flavors, the honey in the smell isn’t there, some rubbery at first and spicy. Some vanilla. Its alright.
