Knob creek is becoming a favorite. Sweet and savory. Vanilla, caramel, toasted oak, and a good spice that leaves a long warm finish. Reminds me of apple pie without the apple.
The nose is sweet, vanilla, and caramel.
The palate is very spice dominant, warm, and the flavours are rich. The 120 proofing is bold but not overwhelming.
The finish is vanilla, green apple, and brown sugar. That spice and warmth lasts a while too!
A lovely sipper and with that extra proof adds a nice kick to your cocktails. I especially enjoy it in "boozy" cocktails such as a Boulevardier or Manhattan.
Strong and spicy with a lot of oak flavor and hints of maple. Enjoyed the spice without having it be overwhelming. It definitely adds more than it covers up.
Second bottle:
A- golden amber
N- fruity caramel. Cinnamon. Alchohol. red apple.
P-sweet red hots, apple pie up front carmel and vanilla oak in the middle apple pie and some cooking spice on the back end mostly clove. Sweet throughout.
B- oily but clean and light. Full not sticky.
O- Wow! This one rocks. Strong flavors that keep up with the bite at 120 proof. This goes into one of my top 5 bottles of all time. This is so different from the first bottle. First bottle was alot! of oak and char. This one has all the beauty that I missed with the beast. Delightful. $36.00 @ Target I'll be investing in several bottles. Steal!
This whiskey has character! Of all the bourbons I've tried so far, this one benefits from water the most. The nose was nearly nonexistent until I put in a bottle cap of water and then it opened up. I've never gotten so much smokey character on a bourbon nose.
The palate starts with a quick blast of sweetness and becomes oaky and nutty quickly. The high proof and strong flavor don't make this the most passive experience--but you knew that's what you were getting with 120 proof. The oak and roasted chestnuts grow into the finish, which also presents a massive char character. The consistency is thick and the finish lasts quite a while. Combined with the warmth from the high proof, it's almost like you're roasting chestnuts in your mouth with oak firewood! Love it!
Edit: drinking the last dram from the bottle as I type this. Still think it's amazing. Still can't get over the perfect nutty woody finish--strong but not bitter at all. I just hope my next bottle lives up to this one.
