Penelope Bourbon combines bourbons from a mash of corn, rye, wheat, and barley. The barrels are new American white oak with #4 char staves and #2 char heads. The bourbon is bottled without chill-filtration at 80 proof.

Tasting Notes

"Penelope aims to produce an easily approachable bourbon, and their second batch continues to deliver this. It's light-bodied with notes of vanilla, pear, lemon peel, and elderflower. It's a bit tart on the finish, which a slightly heavier oak influence might help balance, but its 80-proof and mild flavor profile make it well-suited to being an "everyday" bourbon."
