Nose... Such a great swirl. Butter and wheat bread charge out of the gate, with cherries and chocolate racing behind.
Appearance... A midrange auburn, with bright copper tones. Oily legs running slow and steady.
Taste... Burnt marshmallows, pecans, pepper, cherries, and wheat...
Overall... This is just such a solid entry into the wheater category, and using a 45% wheat ratio is just what this category needed. It has complexity from the swirl, to the finish, and is pleasesant throughout. If Redemption can keep 1/3 of their barrels, and allow them to age to 7-10 years it will bring so much more to the plate. Still solid and worth the shelf, and at 96 proof it's still an easy choice neat....
