Evan Williams White Label Bottled in Bond Bourbon
Bourbon — Kentucky, USA
Reviewed October 22, 2020 (edited November 4, 2020)This upon opening was not impressive. The nose and palate were overly spirituous with a yeasty, nutty funk. I almost threw it away it was so bad. It then sat for months and oxygenated. On a whim I came back to it. Wow. Not even the same bourbon. Nose was all maple and caramel, and the palate was vanilla, brown sugar and cola. Quite tasty. All the sharpness was gone too and it was well rounded. Finish was short but that’s ok. I now use it in my bourbon cocktails. Final thought? A really solid, well proofed bourbon for cocktails, but man, you need to give this one TIME before it’s attributes assert themselves.
