Crystal clear. Boisterous aromas of tomato leaf, tomato paste, bell pepper, poblano, celery, carrot, musk, cilantro, white pepper, cement, saline, cherry tomato, brine, green olive, yellow onions. Fills the room with vegetable soup or sauce aromas dominated by tomato paste.
On the palate the sweetness comes out with an abundance of sour cherry, strawberry, rhubarb, mustard, onion peel, and chocolate.
The finish kind of lives in your mouth until you wash it away with something else. It doesn't dissipate naturally. It's beyond long, and more like permanent. There's banana, grass, fresh sugarcane juice, chili salted melon and dragonfruit.
This didn't really taste like a rum product until the very end. I can only see this being exciting to nerds and adventurers. Fascinating to people looking for a transformative, terroir-driven spirit experience

@gottakuppa Ah, well that explains why your notes are so precise. I can see that spending lots of time in a kitchen will hone your nose and palate. I’m constantly smelling and tasting things in liquors that I have no name for, so I fudge it with something I think is close. These days, I’m always sticking my nose in different spice jars to familiarize myself with new ones. And thank you! As @Soba45 would say, I’m doing my dash. I have a full year of reviews planned, ideally posting one each day when life doesn’t get in the way. I feel I have a good breadth of knowledge about spirits, but am slowly working on the depth that can only come with time and experience. Looking forward to more of your reviews as well!
@ctbeck11 It's definitely outside my wheelhouse. Just dipping my toes into real rums. But as a cook, I definitely know the smell of a freshly opened can of tomato paste. This rum smells like the mise en place for a soup. I've only tasted two of the Clairins, and much prefer the Sajous (closer to a tequila profile). However, I love the mental challenge these rums provide. Can't wait for your reviews! Love reading your stuff to find new things I have to try
