Sorry but aspen is not a wood to age whiskey with. Unless it’s an emergency I guess. You can put all kind of gold medal stickers on it… and I fell for it. But. Aspen is an astringent tannic soft wood and doesn’t add to the flavor, it detracts. The base whiskey is delicious.
