I have the FWGS (PA) version of this. The barrel aging has smoothed the rough edges of the blanco and added vanilla, light fruit, light caramel, and light smoky wet wood while minimizing its minerality, salinity, and alcohol heat. It drinks more like an anejo, which I don't usually buy because I prefer bolder flavors, but I am glad I found this one because I do enjoy it despite it seeming a little muted to me. I recommend sipping it by itself so none of the complexity is lost (I wouldn't pair this with food, beer, or even a cigar).
