N: Not amazingly fuller than the añejo, but richer with more of a syrupiness. Digging into the nose more, but I get a bit of the cheese. In the syrup, I get lots of vanilla with some spices and spearmint adding some complexity and almost a fruitiness (slight wine grape? tangerine?). I get a but of wood this time, but it's more like canvas. Faint nutty oil. A dash of papery mustiness.
P: A lot more packed with wood and fullness. Kind of grassy with some caramel mixed into fainter stewed agave with quite a bit of spearmint. I get plenty of woody spice (clove, ginger, cinnamon). Vanilla. Still sweet, but rich bitterness balances it. The faintest chili. A bit of that cheese eventually comes through as it airs. Very faint red wine sweetness. A sprinkle of black pepper. Sort of a spring water or humming bird feeder sweetness. A tiny hint of allspice.
F: The vanilla and spearmint stand out more here. Woody with ginger mainly. Long-lasting. A hint of cheese. Sweet.
- Conclusion -
This is really good. It's definitely my favorite Insolente. I could be convinced that the plata or reposado is better if I could be convinced that the cheese flavor is a luxury. The little little bit of cheese here works though. This is no lower than a 15 and it could be a 17. An 18 is a faint possibility, but not likely. I'm going with 17.
