This was our final taste after our distillery tour. I was expecting a lot of heat from the 115 proof but it was actually tamer than the 1897 100 proof. Fragrance was initially tight but a couple drops of water opened it up. Toffee leads the way but there's dark fruit and baking spices as well. It's nicely complex, I like this nose. Heat comes back on the palate and it's tougher to pick out the flavors that are mostly true to the nose. It's got a great mouth feel really coats the tongue and gums. This one has a great finish of dry smokey oak in energizer bunny fashion.
