It has a lot of the dessert-like, baking, accessible flavors that make bourbon so good, but without being very sweet. I also get a lot of cinnamon, and a bit of spice. This gives it an interesting flavor, and one I I really like. You might think of it like a very tasty, old fashioned candy.
