Nose: powdered sugar donuts, vanilla, butterscotch. Very pleasant nose. No detectable ethanol, very inviting.
Palate: pecan praline, honey, subtle butterscotch initially then some bitter pecan shell and hot honey. No ethanol burn, but there is a bready/yeasty note back there that is strange.
Finish: after the sweeness fades there is some bright oak, rice chex cereal, and tannic aftertaste. With the crazy high amount wheat in the mashbill I’m not surprised with the bready/cereal notes but I’m surprised how thin the body is
Overall: very different bourbon, not a bad one but seems unbalanced. At 5+ years I’d expect a little fuller body and some richer notes to round out the stark contrast between sweet donut and dry cereal finish. Looking forward to see what they release down the road!
