I appreciate craft distilleries making their own product, but since I've lived on the Kentucky border for the past 3 years, I have had the opportunity to try a bunch of lesser known products. To me there is a clear trend. In order to release younger whiskey that is palatable, they often use a higher percentage of malted barley and/or malted rye to add flavor. Think of the Chattanooga Whiskey profile, and you'll know exactly how bourbon/rye taste from many upstart distilleries in Kentucky. It's fine for 1 pour, but I get tired of that sweet malt profile quickly. If you like it, then there are a treasure trove of cask strength affordable picks in the region.
