Watershed Uncut Unfiltered Bourbon Batch 005 N: light nose, but not youthful. Grainy nose. Maybe smells a little young. P: Comes in youthful and grainy, but then turns into something really nice. Sweet and mellow, then tannic. This is so interesting. It's like a perfectly dialed in 5 year Bourbon. I feel like this is one level separated from a Light whiskey, but in the best way possible. I'm also just now realizing that this is at 121.8 proof and drinks like 105. If you are looking for an amazingly well done young whiskey, this is it! I came in craving bold Char level 5 flavors, but instead I'm getting something else that I want to keep coming back to. Also just realizing the oiliness of the mouthfeel. It has a bit of the paper element of a younger Bourbon, but I really like this! I feel like this resulted from the challenge of "here is a young whiskey, make it memorable and really easy to drink however you can" and the call was answered! F: Finish has been hanging around. Almost goes darker chocolate, but pulls back. I'm not doing this justice right now, but I'll say I really want to come back and sit with this and dissect it. If this opens up even a little bit, the rating could jump a half point. If you are looking to add a "What the hell is that?" whiskey to your collection, this would be a great candidate! As I sit with this, it continues to go baking spices and slides in something like 60% dark chocolate.
