Method and Madness Finished in Amburana Casks
Single Pot Still — County Cork, Ireland
Reviewed

The nose presents with cardamom, clover honey, and marzapan. The body of the drink is characterized by a honeyed sweetness. As the whiskey matures on the tongue, tannic notes from the cask begin to blossom and transition into vanilla alongside spicy notes of clove and pepper. The drink finishes with a cleansing astringency. The barest hint of hazelnut, cinnamon, and demerara sugar lingers in a pleasant aftertaste.
