I'm on a mission to try all of Scotland's distilleries. Mostly active but I've knocked off a few inactive along the way. It starts getting a bit harder for those opened in the last few years so I'm cheating and trying new make and progress statements. Alephi's 2 year progess statement I had Wed night was beautiful. Anyway to the drop at hand. Interesting back story this one for those who are avid golfers. A decade ago a golf caddie had an idea that he wanted to open a distillery. Ambitious on his salary you may think. What he had was a lot of rich contacts however i.e. those he had caddied for) and so after a lot of ringing round he had £100k of seed funding, bludged off the govt grants system a bit and the Wemyss family of Wemyss malts fame sorted the rest. Some time this year we should see whisky hopefully. Anyhow the new make. Its a bit like Sake or Soju. Sweet Umami, malt, fermented cabbage. I like it. Hard to rate really given its whisky that isn't quite yet i.e. half finished. So I won't.

@PBMichiganWolverine. No sadly MoM is my only go to outside NZ. @Scott_E Don't worry it's mostly samples so my liver should hold up. :-). @Rick_M ah that i didn't know. Due to a 3 and 5 year old it's been 5 years since I've been golfing. Maybe I'll get to do Islay and St Andrew one day :-)

@Soba45 - yes, Kingsbarn GC in St. Andrews is always rated in top 100 golf courses worldwide. We have already booked a round there for our trip to the area this August. Maybe the new make will be offered in clubhouse, but I doubt it. :)

I don’t know...I think Jason Mamoa’s Aquaman is way too cool for @Generously_Paul and @Scott_E...but they can practice bench presses using @LeeEvolved empty FedEx boxes or my vat of 450 bottles . @Soba45 did you find Abhainn Dearg? I randomly ran into 1 bottle at a small store in Frankfurt last year. Crazy expensive ($250) for a freakin 3 yr old

No love for me or Scott. Looks like we are the Aquaman and Robin of this league.
Something tells me all of these new distilleries will be offering a 3yo scotch bottling to strike while the irons are hot, so to speak. That’s when I will light the Vat Signal and assemble the Scotch Distillery Team again, and we will use our powers to vanquish those new, young samples. I’ll use @PBMichiganWolverine’s powers of Business Travel to locate the samples, @Generously_Paul’s ability to harass me mercilessly to buy them, my power to throw my credit card at retailers like ninja stars, @Telex to use the power of the internet to tell people we are assembled and sampling again and finally, @Scott_E’s ability of slow motion to remind us that he’s still not finished with Round 4’s offerings. 🤣. SDT ASSEMBLE!
Cheers GP. I'm pretty well advanced already. I have 20 more samples to go and then I've done all distilleries which were open before 2005 bar one, pretty much up to where you guys are at less Abhainn Dearg and Speyside I think based on conversations with LeeE. Going to get a lot harder to get the new stuff as it comes up me thinks. Some new distilleries are big corporation straight to blend only affairs. I'm only 3 years into my whisky journey though so plenty of decades left hopefully :-)

Yes I agree. Funny thing was I at Dramfest last month and tried the Kilchoman new make provided by the founder / distiller owner himself. When I was like 'wow fermented cabbage' his face was like 'I think you just defiled the reputation of my fine distillate and although I'd never say you are an idiot you are'. His voice instead said 'Ah floral, herbaceous.....etc etc'
That’s a good overall description of the new-make from many distilleries, I think. I’ve tasted less than a dozen but they’ve all had that funky cabbage water thing going on, even the peaty ones. Baby Wolfburn reeks of it.
