I must say, this was the star of today’s distillery visit, and perhaps the first time a gin has outshone a whiskey for me. I’ve never tried anything quite like this. It’s miles away from the traditional London Dry, with oodles of honeysuckle, lavender, and rosemary on the nose that carries over into the palate. I had this neat and in a fizz cocktail and it was excellent both ways. I can see this making a terrific old fashioned too with some orange or cardamom bitters, a Demerara sugar cube, and a slice of blood orange topped off with a splash of Topo Chico (because Texas). I’ll definitely be hunting down a bottle at $30 and you should too. Cheers!

@Soba45 you can pretty much make gin out of anything ? I can take, let’s say some desserts like carrot cake, and mix it up with sweet botanicals, distill it, and voila...carrot cake gin ?

You'll be a G&T man before you know it :-). So much diversity in the gin world and as a new concept can be pumped out super quick and minimal legal standards to meet unlike boubon and whiskey some crazy stuff pops up. I tasted one made of pineapple lumps once.. (a nz candy made of chocolate and gooey pineapple filling)...interesting experience!

This sounds interesting. So—in a fizz cocktail, is it just this and sparking water ?
This sounds like the perfect Gin for those who like botanicals, but not juniper. Interesting.
