The nose is apple skins, cherry juice, buttery shortbread. Flowery and perfumed. The apple pops throughout. There is a metallic, citric quality on the tail end.
Taste smacks of sticky, sweet honey, toffee and molasses. Morphs into maple about halfway through the sip. The buttery shortbread also pushes through, with a drop of vanilla, which adding a little water boosts. The stewed apple also breaks out with a few drops.
Finish is mild oak, vanilla tobacco ash. Stone fruits: sugarplum and prune. There is a lingering ashy burn at the end. Syrupy feel and finish. This is a sticky, sweet, and slightly tart Irish whiskey.

@Guitar_mann after I left this review and have had more of it, I can't disagree with you. the finish is not working for me the way it did at first. I'm new to Irish as well and have had mixed results
@Bill-Shannon I found the finish so astringent it really hurt the rest of this otherwise fantastic pour. A bit of sweet crispness would rescue this to nearly 4.5 to 4.75 stars for me. However, I am fairly new to this Irish game. It may be the norm on the higher end bottles.
