Unlike tequila, mezcal can be made from many different types of agave and is allowed to be produced in eight different Mexican states. Much like different grape varieties in wine, each agave species imparts its own unique flavor profile. Mezcal can be aged or unaged, and enjoyed neat or mixed into a cocktail.
