NOM 1480 Amatitan, Jalisco 100% Agave Certified Organic 2.19.22 Served: Neat, Flute Bottle Open: <1 Week Aroma: Green plantain, vanilla, oak sawdust, birthday cake, beeswax. Distinctly sweet. The wood fades into vanilla during subsequent inhalations. Flavor: Woody, dry, and lightly savory at the front of the mouth. More cakey and sweet in the middle. Banana peel finish. Chewing: Savory Aeration: Pound cake, then savory once diluted with saliva. Exhalation: More cake with some banana. One thing is for sure, this tequila loves the air. I think it would taste good as a shaken sour.
