This is an additive free tequila that is made from 100% organic blue Weber agave grown 9,000 feet above sea level in the Jalisco highlands and produced at Tequila El Rocio, S.A. de C.V.
(NOM 1636). The agave is cooked for 72 hours in a masonry oven, milled with a traditional tahona, and undergoes wild and malolactic fermentation in American oak wooden barrels. This expression is distilled on alembic pot stills, after which it is bottled at 96 proof. .

Tasting Notes
