      Pine sap with notes of mint on first sip, with a strong gentian-like bitterness. Walnut and dried fruit in the follow through. Herbaceous.

      Very interesting and complex. The Amari is Very Bitter more related to Fernet. Strong fennel and umami notes with the sugar being a lot lighter. The Amaro is very dry and astringent in the finish. I have heard that mushrooms are a component to the flavoring of this Amari

      1.25.22 Served: Rocks glass, ice sphere Bottle open: 1 month Like cynar and fernet had a baby with a lot of honey. Super sweet, super bitter, and quite earthy.

      1.2.22 Served: Neat Aroma: Molasses, fig, panettone (raisin, cinnamon, bread) proofy spice cabinet. After aroma fatigue, the honey becomes evident (clover or orange blossom). Taste: Starts syrupy sweet with maple syrup or honey. Mids as simple raisin. Finishes with lingering sweetness, bitterness, and a burn that is either proof or spice. Aftertaste and bitterness level are close to fernet. Overall impression: Dried fruit, honey, fernet.
