Apologue Persimmon Bittersweet Liqueur is made by a Chicago-based company which features regional ingredients from independent farmers. Aside from the persimmon, ingredients include hibiscus flower, bitter orange peel, orange peel, lemon peel, cinchona bark, gentian root, rhubarb root, ginger root, cinnamon, cardamom, and spearmint. It is sweetened with organic sugarcane.

"With a vibrant garnet hue, this liqueur looks and smells a lot like a well-known bitter amaro with very similar coloration. On the palate, however, it sets itself apart. First, there is a wonderfully piquant spice note, a bite of gentian, and hints of bitter orange. While you can certainly pick out the honey-like flavor of persimmon, it's not the predominant note. Use this as a substitute for bitter orange liqueurs in cocktails in the Negroni family or as the base for a Spritz."
