"Mosto Verde" ("green must" in Spanish) refers to the technique of distilling the wine before the fermentation is complete, with the aim of preserving the fresh, floral aromas of the grape.
BarSol's flagship Pisco starts with 100% aromatic italia grapes fermented until the alcohol reached 3-5%, then distilled to the precise proof at which it is to be bottled (Peruvian Pisco may not be diluted with water).

PiscoBrandy distilled from grapes and produced in either Peru or Chile. In Peru, there are eight allowable grapes and in Chile, there are three. Peruvian Pisco is distilled only once in a pot-still and no wood aging is allowed. Peruvian pisco cannot have any alterations including dilution. Chilean pisco can be distilled multiple times, can be aged, and can be diluted prior to bottling.

"Distinctly herbal, resinous notes emerge from brooding, cerebral spirit. Saffron, laurel, and amaretto give way to a sensation of the palate that borders on medicinal, almost suggesting a pomace brandy rather than one made from wine. Texturally cohesive and obviously well-made, but lacking in cheery, vibrant fruit, this is not for Pisco beginners. "
