Calirosa is produced by the Real family in Amatitán, Jalisco, Mexico. This extra añejo expression is produced from 100% Blue Weber agave that is harvested at 7 to 9 years with a 26% sugar content.
It is then cooked slowly in brick ovens, fermented for up to 50 hours, twice distilled, and then aged in California red wine barrels for 36 months. It is bottled at 40% ABV and available as of November 2021.
