This expression is made from additive free 100% blue Weber agave that is grown on a single estate in the Jalisco highlands (Los Altos). It is slow fermented without fibers in open air wooden tanks, twice distilled on stainless and copper hybrid stills. It is rested for one month in a combination of used Burgundy and Bordeaux wine barrels, then 5 months in ex-Chardonnay wine casks.
It is bottled at 92 proof. Available beginning June 2024 at select on-and off-premise locations in CA, FL, IL, NY, and TX. (SRP $59.

Tasting Notes
"The nose is fruity with a twinge of grassiness, with aromas of roasted agave, sweet apple, taragon, and bell pepper. The palate is chocolatey and peppery, with roasted agave flavors at the forefront, backed up by quince jelly, porcini mushroom, and toasted oak spice. A balanced wildflower honey sweetness carries into the finish. "
