Starting life in the Kununurra in 1998, the Great Northern Distillery moved to Perth in 2002, and then moved again to its current home in Middle Swan in 2006. The distillers elected to distil with sugar cane as opposed to molasses.
The sugar cane itself was once purchased from the Ord River Sugar mill until its closure, where after the sugar cane has been imported from Queensland. Note: Availability limited to Australia.

"Beginning with a feinty nose, the Canefire white mimics its darker cousin though a bit sweeter. Small desiccated coconut dusts the plastic vegetables this round, with sweet greenery then break through with vanilla beans wafting through towards the end. Very fresh on the palate, tart citrus and wood flavors make their way through the mouth, steadily climbing through a bed of herbs. A long finish, it prickles along the way of citric tang and sweet vanilla twists for a tart appealing finish."
