Produced at Copal Tree Distillery on the grounds of the Copal Tree Lodge in Belize, Copalli was launched in 2019 by marine conservationist Todd Robinson and Anya Fernald. Made from only three ingredients — fresh-pressed organic sugarcane juice from heirloom cane grown on the adjacent Copal Tree Farm, collected rainwater, and non-GMO yeast — it is a blend of pot and column distilled rum rested in stainless steel before bottling.
No sugar or additives are used. Bottled at 84 proof.

"On the nose, Copalli White Rum has a lovely aroma of fresh grass, sugarcane juice, and a hint of vanilla. Its flavor is equally bright and fresh. It's incredibly smooth on the palate, with a touch of pepper and citrus. "
