It's not everyday that you come across a vodka made from sweet potatoes, let alone one that the distillers farm themselves. Made from 100% estate grown sweet potatoes, it takes 10 pounds to make one bottle. The sweet potatoes are cured for 12-16 months after harvest. After cleaning, cutting, and cooking, the resulting mash ferments for five days. They distill in their Holstein copper pot/column hybrid to 190 proof. After dilution, the vodka is carbon filtered and bottled at 80 proof. Gluten free.

Water is added to bring the spirit down to as low as 37.5% ABV in the EU and 40% ABV in the US. It is usually filtered, often with charcoal, prior to bottling. It is almost always clear and unaged.
