Del Maguey Las Milpas
This expression is produced at Anastasio Cruz Antonio palenque in the village of Las Milpas in Oaxaca. It is made from 100% Espadín agave that is roasted in an earthen oven that is carved into the hillside.
It is then milled by a horse-drawn molino, fermented in open air wooden tanks using heritage yeast, and twice distilled small copper pot stills. .
