Desert Door Texas Sotol is made from wild-harvested Texas sotol, also known as desert spoon. After harvesting, the plants are trimmed and steam-cooked.
Then the heart is fermented with an organic, proprietary yeast and distilled at the Desert Door Distillery in Driftwood, Texas just outside of Austin. The Oak Aged version matures in new, charred American oak barrels and is bottled at 100 proof.
