Doc Brewer's Rye Whiskey
Blackfish Spirits Distillery // Washington, USA
Blackfish Spirits Distillery in Auburn, Washington distills from locally grown grain. Their Brewer's Rye is made from malted rye and barley.
RyeMash bill at least 51% rye; aged in new, charred oak barrels.
"Young rye whiskeys have a tendency to be all spice and no subtlety. Thankfully, despite pouring with a pale straw hue, Doc Brewer's malted rye breaks that mold. It's much softer on the palate and its time in barrel doesn't obscure the grain, which comes through with a very pleasant cereal quality, light floral notes, and just the right amount of heat. It's not too brash and vanilla just floats in the background; a very nice, light whiskey overall."
