Don Ignacio Hernandez Gutierrez and his family had been growing and farming agave for decades before they decided to produce their own tequila. They established Casa Don Nacho in 2003 (NOM 1508 Fabrica de Tequila Don Nacho) and manage the entire production process from farming to distillation and bottling.
His namesake tequila añejo is made from 100% blue weber agave estate-grown in the Los Altos (Highlands) region of Jalisco, Mexico. After double-distillation, it ages for 24 months in casks of American white oak.

Tequila AñejoDistilled from 100% blue Weber agave, it is aged for at least a year in barrels not to exceed 600 liters. Any type of wood is acceptable, but ex-bourbon barrels are most common. Añejo tequilas are also known as "aged" or "extra aged".
