This is an additive free tequila made from 100% blue Weber agave that is harvested from both the highland and lowland fields of Jalisco. Produced at Compañia Tequilera Los Valores, S.A. de C.
V. (NOM 1608) it is then cooked in brick ovens for 48 hours and cooled for 24 hours before extraction via roller mill. The juice is fermented without fibers using natural yeast in open air stainless steel tanks, then twice distilled on stainless steel tank stills with copper coil. This expression is rested for 3 months in American oak ex-bourbon barrels, then transferred to French oak ex-wine barrels for an additional 10 months, with a total of 13 months of aging.
