Founded in 2010 by Brooklyn-based chef TJ Steele, El Buho is produced by the Don Isaac family in Santiago Matatlán, Oaxaca, a fifth-generation operation dating back to 1880. Made from 100% Espadín agave grown at 5,000 feet above sea level in the central valleys of Oaxaca, the agaves are roasted in a stone pit, crushed by horse-drawn tahona, and distilled unaged.

Mezcal JovenA spirit distilled from one or more different varieties of agave. Can only be produced in designated areas within 9 different Mexican states. Must be bottled in México. This is unaged or aged in stainless steel or plastic containers before bottling.
Tasting Notes
"Lots of metallic and minerals on the nose along with some overripe tropical fruit and a moderate amount of meaty smoke. Leather and green agave notes come in to play as well. The mezcal is soft and round on the palate with an umami quality to it. The smoke is there, but doesn't overwhelm the other flavors. The finish is more bitter than sweet and the spiced factor is on the low end. A solid value mezcal and one suited to work well in cocktails."
