The husband and wife team of Jay and Noelle DiPrizio, along with Jay's brother Vic, founded Chicago Distilling Company in 2010. Jay was inspired to create the distillery after learning about history of moonshining in his wife's family. To honor this legacy, they name their products after members of their family.
Finn's Gin is named after Jay and Noelle's son. This gin begins with a corn-based neutral grain spirit. Several botanicals, including juniper, sichuan peppercorn, dried orange peel, green cardamom, hibiscus, coriander, cassia and cubeb, are macerated with the spirit before being distilled and bottled at 40% ABV.
