The husband and wife team of Jay and Noelle DiPrizio, along with Jay's brother Vic, founded Chicago Distilling Company in 2010. Jay was inspired to create the distillery after learning about history of moonshining in his wife's family. To honor this legacy, they name their products after members of their family. Finn's Gin is named after Jay and Noelle's son. This gin begins with a corn-based neutral grain spirit. Several botanicals, including juniper, sichuan peppercorn, dried orange peel, green cardamom, hibiscus, coriander, cassia and cubeb, are macerated with the spirit before being distilled and bottled at 40% ABV.
Modern GinAlso has been referred to as "Contemporary", "New Western", "New Wave", and "New American". This style is not legally defined. In general, this category of gin, while it does contain juniper, places less of an emphasis on this botanical. Other botanicals not classically used in London Dry gins are often utilized and often highlight botanicals grown in the region the gin is produced. Most produced as either London Dry or Distilled Gins.
