Harvest Spirits is an official OG of New York State craft distilling. The heart of the production is apple spirits distilled on their traditional German 100-gallon pot-still.
When aged in oak these become part of the “Cornelius” line and bear a delicious resemblance to Calvados or American applejack. Of course, when surrounded by the Hudson Valley’s superb fruit sources one must experiment and there are a handful of Cornelius spirits that get the extra attention of a second fruit maceration.

In this case sweet Bing cherries are married to two-year aged apple brandy for an additional year in oak quarter casks.

American BrandyProduced in the US, this is usually referring to brandy distilled from grape-based wine. If the producer uses other fruit, it must be stated on the label. If aged under two years in oak, it must state the word "immature" on the label. Beyond that, labels such as VS, VSOP, and XO mean little as the brands themselves dictate what that means to them.

"The Bing cherry influence can not be overemphasized, and the spirit shows a spectrum of the fruit’s flavors from the acidic crunch of the skins to the earthy, hazelnut and dark chocolate character of the pits. Unfortunately the cherry’s intensity hijacks some of the apple base that Harvest Spirits does so well. By all means, cherry lovers should rejoice and one would be hard pressed to find a more intense cherry experience."
