Ironbark Aged Moonshine

This is an aged variant (albeit only 4 weeks) of the regular Ironbark Moonshine release. The barrels used for aging are virgin American barrels with heavy char, and shows how the original method of transporting whisky would have given thought to use the barrel for more than just transportation.
This is made using all Australian grain (corn and rye) and distilled in a traditional copper pot still. Note: Limited availability in Australia.

Tasting Notes
"There’s a mix of fresh sweet corn and cooked corn with bruised vegetable and sweaty vegetable. Those four weeks have gone a long way to softening the moonshine around the edges, with a fresh sourdough appearing with rye and malt biscuits. Chocolate appears when tasting and citrus peels and spices rush in to fill the void left by the aging. Cooked vegetable is still present throughout. A pleasant addition of warm butterscotch comes over towards the end and the finish is short and soothing, moving into a sweeter section with vanilla and sweet rye coming through over the cooked corn. "
