This expression is named for the Bellefontaine Farms in Basco, WI that were originally purchased by the Henry family in the 1800s. Barrels of straight bourbon are selected by "French Cognac process" and finished for 8 months in ex-Cognac French oak barrels, a minimum 5 years in all.
It is brought to proof with "Petit Eau", water that had been aging in bourbon barrels a minimum 3 years. Proof varies by batch.
