J.P. Wiser's Legacy Canadian Whisky
Wiser's // Ontario, Canada
This whisky is a tribute to J.P. Wiser and a testament to the quality of Canadian whisky that Wiser established as a style many years ago. Former Master Blender David Doyle blended this Canadian gem with then Wiser apprentice Don Livermore. A rye-grain heavy mash is distilled in traditional copper pot-stills then aged in toasted new white oak barrels. A toasted oak, rather than charred oak, helps mellow the distillate through the aging cycle.
CanadianDISTILLED IN CANADA AND AGED IN BARRELS FOR AT LEAST THREE YEARS; OFTEN (BUT NOT ALWAYS) CANADIAN WHISKIES ARE BLENDS OF CORN, BARLEY, AND RYE WHISKIES WHICH WERE DISTILLED AND MATURED SEPARATELY. TRADITIONALLY, CANADIAN WHISKEY IS CALLED “RYE”, ALTHOUGH NO MINIMUM PERCENTAGE OF RYE-GRAIN WHISKY IS REQUIRED IN A BLEND.

"J.P. Wiser would be rolling in his grave. Not because this whisky insults the name, quite the opposite in fact – he’d be rolling to bust out and try it. The whisky’s nose pulses from one note to the next where a potpourri wafts in and out like a star-studded movie full of cameos. The cast includes maple, baking spices, vanilla, rye bread, charismatic oak and the full spectrum of orchard fruits. Missing is George Clooney. All of the same notes land in the palate mingled with a sweet and peppery citric zest. Toasted oak comes through and fades into tobacco as Legacy starts rolling its long list of delicious finishing credits. "
