Ki No Tou Kyoto Old Tom Gin
Ki No Tou is an Old Tom Gin from Kyoto Distillery. It is made using the distillery's standard Ki No Bi Dry Gin as its base which uses the following botanicals: juniper berry, orris, hinoki (Japanese cypress), yuzu, lemon, gyokuro (green tea), ginger, red shiso leaves, bamboo leaves, sansho pepper, and kinome (Japanese herb).
The Dry Gin is then sweetened post-distillation with kokutou (black sugar) from the Okinawan island of Yonaguni. This sugar retains a higher mineral content than standard sugar.
