Lind & Lime Gin
This Edinburgh gin made in the London Dry style uses 7 botanicals in its production: juniper, coriander, angelica, licorice, orris, fresh lime peel, and pink peppercorn. The first 6 are distilled with neutral grain spirit in a copper pot still.
It is then heated for 9 hours with the lime in a vapor basket above the distillate, then condensed together. The gin is rested for 2 weeks before bottling at 44% ABV.
