Mezcal Derrumbes San Luis Potosí
This expression is produced from Salmiana agave, grown wild in the Central Mexican Plateau in San Luis Potosí. The agave is cooked in above-ground ovens, hornos, instead of wood-burning stove, which means it is not smoky. It is tahona crushed, fermented with wild yeast, and twice distilled in small copper pot stills.
