Produced in Tlacolula, Oaxaca, Mezcal Sacrificio Joven is made from the hearts or "piñas" of 8 to 10 year old espadín agave plants. The hearts of the agave are roasted for two days in mesquite and ocote pine wood-fire ovens.
After the agave juice is harvested through traditional processes and fermented, it undergoes a double distillation - first through a steel still, and then through a copper still. The mezcal is then aged 30 days in stainless steel tanks before being bottled at 40% ABV.
