In contrast to his single-variety mezcals, this special bottling is made from whichever plants are at their peak maturity, meaning that each successive batch will have a different varietal composition. For this batch, Tío Rey loaded up his trademark clay pot-still with Espadín (62%), Coyote (28%) and Mexicano (10%) agaves.
Mezcal JovenA spirit distilled from one or more different varieties of agave. Can only be produced in designated areas within 8 different Mexican states. Must be bottled in México. This is unaged or aged in stainless steel or plastic containers before bottling.
"Soft, complex, almost Scotch-like, the sweet wood smoke and melon-dominated aroma of this mezcal doesn't quite prepare you for its all-out smoked-chili and medicinal assault on the palate. There are a lot of interesting things going on here, but there are two distinct components that seems to stand in opposition to each other rather than contribute to a greater whole, one warm, delicate, and seductive (no doubt that's the Coyote speaking), and the other dark, brooding, and intensely focused, perhaps more conventional."
