Ohishi Islay Cask Finish Whisky
This expression is produced from 100% rice, both malted and unmalted, that is initially activated by white koji seed and fermented in clay pots for 7 days. A secondary fermentation takes place for 14 days in stainless steel before it is distilled in stainless steel pot stills. It is matured for 5 to 6 years in a combination of ex-sherry and ex-brandy casks, then it undergoes a secondary maturation for 2 to 3 years in ex-Islay Scotch casks.
It is a single cask bottling at varying ABVs around 43.2%. .
