Although initially developed for the making of Spanish sherry, the solera method of aging has since crossed into the production of wine, beer, brandy, and whiskey such as this from Oppidan Spirits in Illinois. Along with corn, the bourbon mashbill includes malted rye, chocolate malted rye, special B caramelized malt, and 2-row barley.
It ages solera-style in barrels of American oak, French oak, and Oloroso sherry casks, with only the American oak barrel ever getting emptied. .
