Jean-Luc Pasquet and his wife, Marie-Françoise, had been growing fruit conventionally on their 7 hectare estate until 1995 when they began to explore organic winemaking. In 1998, they were granted "Agriculture Biologique" certification.
Their Coeur (meaning "heart") de Grande Champagne is not labeled with an age-statement or VS, etc. designation, but is intended as an entry-level offering with 5-10 years of aging in Limousin oak.

"There is a fragrant pear and peach aroma with faint barrel baking spices. There is a fresh, full mouthfeel to the brandy and the fruity and youthful cognac has gentle notes of lemon peel and licorice. A great entry to cognac. "
